How to make a Crispy Dumpling snowflake?

Mix ingredients for the snowflake – In a bowl, mix together 1 part of potato starch, and 10 parts water.

Pan fry dumplings and add mixture to pan – Add 1 tbsp of oil to your pan and fry your dumplings for 1-2 minutes over medium heat. Next add your mixture to the pan and cover.

Fry until a crispy snowflake is formed – Fry with lid on for 8-9 minutes. Uncover when most of the water evaporates and continue frying uncovered until the snowflake looks dry and crispy, move the pan around the hotplate to evaporate all liquid. Place a plate over the dumplings and turn the frying pan upside down to transfer the dumplings onto the plate (crispy side up). Finish with sesame seeds and Cheers Chilli Crisp.

Jason’s tips:

Alternative starch If you don’t have potato starch, you can use corn starch, tapioca starch or rice flour.

Use a non-stick pan that is the correct size – Choose a non-stick pan, you could do this on a stainless pan, but trust me it’s not worth the headache. A good non-stick pan will make life much easier. Secondly make sure it’s the right size, if it’s too small you will end up with dumplings bunched too tightly and no room for the snowflake. If it’s too large, you'll require too much mixture and it will take too long to evaporate, leaving you with burnt dumplings.

Stir the mixture before adding it to the pan – Give the mixture a quick mix prior to pouring in the pan to ensure the starch is evenly distributed.

Move your pan around the hotplate When forming the snowflake move your pan around the hotplate concentrating the heat on the spots where the liquid remains.

Instructions

  1. Place a frying pan over medium heat. Pour in oil (about 1 tbsp for 10 dumplings). Then add the dumplings and cover with a lid.

  2. While the dumplings start to cook, mix potato starch and water (1 tbsp starch to 10 tbsp water).

  3. Stir well then pour the mixture into the pan and cover with a lid. Leave to fry for 8-9 minutes. Uncover when most of the water evaporates and continue frying uncovered until the snowflake looks dry and crispy, move the pan around the hotplate to evaporate all liquid (avoid burning).

  4. Place a plate over the dumplings and turn the frying pan upside down to transfer the dumplings onto the plate (crispy side up). Finish with sesame seeds and Cheers Chilli Crisp.
