The client challenge
Large exhibitions create a difficult hospitality environment.
Guest demand arrives in waves, attendance can exceed forecasts, and service needs to move quickly. At the same time, food presented alongside a major corporate brand still needs to feel polished and considered.
The challenge was:
How do you serve thousands of guests efficiently without turning a premium food experience into bulk catering?
Our approach
Dumpling Cheers created a focused live tasting experience featuring:
Pork Dumplings · Pork Wontons · Prawn Hargow · Vegetable Dumplings
Rather than preparing large volumes in advance, production ran continuously behind the guest-facing service area.
Our operating flow was:
Steam → Portion → Finish → Tray → Replenish → Guest
Each tasting bite was individually presented on Chinese dining spoons, with multiple presentation trays circulating throughout service.
The result
2,800 tasting serves across two days
1,550 serves on the busiest day
40% over the planned volume served in the highest standard
Despite demand significantly exceeding the original allocation, the team maintained continuous service, fresh preparation and individual presentation throughout the activation.

CASE STUDY 02 - BridgeClimb Sydney × Lunar New Year
Making food part of the destination experience

The client challenge
For a destination business, an external food vendor cannot simply arrive, set up and behave like a market stall.
The experience needs to:
- fit naturally within the venue;
- complement the existing customer journey;
- respect operational restrictions;
- reinforce the occasion;
- and require minimal management from the host team.
For BridgeClimb's Lunar New Year program, food needed to feel like part of the overall experience.
Our approach
We created a dedicated Lunar New Year Dumpling Bar inside the BridgeClimb environment.
The operating layout was designed around the venue: cooking took place away from the main guest area, while the Dumpling Bar remained customer-facing.
Guests could enjoy dumplings before their climb or as a post-climb refuel, with adult and children's serving formats available.
The Dumpling Cheers brand remained visible, but BridgeClimb and its guest journey stayed at the centre of the experience.
The result
The partnership went beyond the original Lunar New Year activation.
BridgeClimb subsequently worked with Dumpling Cheers to develop a Dumpling Bar Experience for group customers, turning a seasonal activation into a potential ongoing hospitality product.

CASE STUDY 03 - XPENG Alto Artarmon
Preparing for the demand the client cannot predict

- Event: Premium EV Launch
- Venue: Car Dealership Parking Lot
- Format: Live Dumpling Bar
The client challenge
Launch events frequently begin with uncertain attendance.
Registrations may be relatively low, while actual turnout, guest appetite and dwell time can be very different on the day.
For the organiser, there are two equally bad outcomes:
- running out of food when the event performs strongly, or;
- paying for large quantities that are never used.
XPENG Alto Artarmon originally planned around approximately 30 registered guests, with a catering package allowing for 50 dumpling serves.
Our approach
Rather than preparing only to the minimum expected attendance, Dumpling Cheers planned enough production capacity for approximately 100 serves.
That gave the Alto team confidence that if attendance or demand exceeded expectations, the hospitality could continue without interruption.
Food was cooked fresh throughout the launch rather than being produced in one large batch.
The result
Demand significantly exceeded the original expectation.
50 serves originally included
90 dumpling serves ultimately enjoyed
71 bottled soft drinks and waters served
We had the capacity to continue serving while the event remained busy, without the client needing to make operational decisions during the launch.
What this demonstrates
Good event catering is not simply about delivering the quantity written on a quote.
It is about anticipating what could happen and being prepared when the event succeeds beyond expectations.
